When a warehouse scale misread led to a slightly overenthusiastic proofing of our gin, we had two choices: admit defeat or get creative. Naturally, we chose the latter. A quick re-distillation saved the day, preserving the bright botanicals while giving us a fresh perspective. That’s when inspiration struck: What if we threw it in some ex-bourbon barrels and saw what happened?
What happened was magic. The oak worked its charm, layering in warm notes of vanilla, caramel, and spice while complementing the gin’s juniper backbone. The result? A gin with unexpected depth, a touch of bourbon’s influence, and a story worth telling (preferably over a cocktail).
